We will teach you how to brine and cook a turkey, and answer any questions you might have - from brining and seasoning, to making sure it turns out perfect every time -  By the end of your private cooking class, you'll have a beautiful roast turkey, homemade gravy, stuffing, three sides -  and new tips to help prepare for any foodie's favourite holiday.

With a little planning we can give you the culinary knowledge, and provide you with the tools/instruction/mimosas needed to prepare a gourmet brunch featuring goodies like:

mini croque monsieurs, pecan-topped sour cream & raspberry coffee cake bites, and creme fraiche/smoked salmon/chive topped blini.

Smoke and Fire

 

An introduction to Grilling and BBQ.

​

This day long class will start with a discussion on cuts of meat and explain which cuts are best suited for each cooking technique. 

 

We will build a dry rub, discuss brining and mops and finally explore the difference between grilling and BBQ.

 

Along the way we will also build some unique sides and discuss wine, beer and champagne and how they compare and contrast with what we choose to prepare.

 

Like all classes we will build the menu to each students desires or dietary needs

Stews and Braises

We'll make roasted chicken stock, and then focus on techniques to make a variety of Braises.

Our menu will include:

Braised Short ribs, Coq au Vin and Braised Lamb Shanks we will also explore the perfect accompaniments: Pomme Puree, Tomato Thyme Risotto and Polenta

Spend the night with your honey and learn some valuable kitchen skills together along the way!

Menu Includes:

  • Goat Cheese Souffle for Two

  • Steak with Red Wine-Shallot Sauce

  • Pommes Anna

  • String Beans with Orange Gremolata

  • Dark Chocolate Mousse with Fleur de Sel Whipped Cream

Introduction to Soups

This is the right time of year to perk up your soup repertoire with the vibrant and warming flavors of Mexico, India, and Italy. All the soups in this class are vegetarian. Tuscan Ribollita Smoky Black Bean Soup with Sweet Potatoes Curried Butternut Squash Soup  Indian-Spiced Red Lentil Soup with Coconut Milk & Spinach

Take a worldwide tour via soups which you'll make and dine on together.  Learn the techniques necessary to make 3 of the following:   New England Clam Chowder, Spanish Caldo Gallego (kale and sausage soup), Matzo Ball Soup, Tuscan Ribollita, Tex-Mex Tortilla Soup, French Onion Soup Gratinée, Russian Borscht (savory beet soup) or Japanese Ramen

Private classes start at $275 for 1 person, and $75 for each additional person up to and including the 3rd person. 

Therefore:

1pp = $275, 2pp = $350 ($175/person), 3pp = $425 ($141.66/person)
$135 per person covers parties of 4 to 20 people.

These in tandem classes reinforce teamwork as you work together to build a meal. We can explore the spring table, holiday table or concentrate on any ethnic cuisine that you both wish to master. It's never too late to revisit and recreate that first meal in a sidewalk cafe or experience that romantic meal for the first time. Let our chef guide you thru classic techniques so you two can transcend to a new culinary epiphany.

Classes typically run 3 – 4 hours and all class prices include the price of the meal, the class itself, tax and gratuity and wine.
